Gluten-free Fusili Pasta in a Kale and Tomato Ragù with Seared Yellow Squash and Garlic Scape Pesto.
This is a dish I made for a girl who was gluten free and didn't eat a lot of meat. It turned out to be a vegan dish in the end. We both really enjoyed it a lot. It reminded me of when I worked at Del Posto. Just the way it felt to plate it and then really enjoying it afterwards.
