Spicy Salmon and Vegetable Salad
This is a perfect meal that you can make for after or before a workout. It's something that is high in protein, high in omega-3 fatty acids, and filled with fresh vegetables. It's quick and easy to put together and and isn't very expensive. After you try this recipe once or twice you'll be able to substitute any veggies or spices of your choice.
1- 14.75 oz can of Salmon Filets- remove bones and liquid
1 Carrot- fine dice
1 Stalk of Celery- fine dice
1 Cup Cauliflower- finely sliced
½ tsp -Salt
Black Pepper- large pinch
1/4 tsp Cayenne Pepper
1/4 tsp Ground Coriander
1/4 tsp Turmeric 1-2 Tbsp Olive Oil 1 tsp White Wine Vinegar or Lemon Juice
Place the cleaned salmon filets into a large mixing bowl. Break up the fish into large chunks.
Add the rest of the ingredients and mix gently with a large spoon until well combined. Season to taste with salt and pepper.
Allow it to rest for 15-30 minutes before eating.
This dish goes very well with warm soft corn tortillas and a nice green salad. This recipe makes enough for at least 2-3 meals. Enjoy!
